  1. ADD JUICES TO A KETTLE; STIR IN PECTIN UNTIL IT DISSOLVES.
  2. PLACE OVER HIGH HEAT, BRING TO A BOIL, STIRRING CONSTANTLY TO AVOID SCORCHING.
  3. ADD SUGAR; MIX WELL.
  4. CONTINUE STIRRING AND BRING TO A FULL ROLLING BOIL (A BOIL THAT CANNOT BE STIRRED DOWN).
  5. BOIL HARD, EXACTLY 2 MINUTES.
  6. REMOVE FROM HEAT.
  7. SKIM FOAM AND POUR INTO HOT, STERILIZED JARS TO WITHIN 1/8 INCH OF TOP.
  8. PLACE LIDS ON JARS, TIGHTEN BANDS, PLACE IN A HOT WATER BATH, AND BOIL FOR 10 MINUTES.
